Homemade Chicken Noodle Soup

 

Makes 4 servings
Preparation time: 10 minutes
Cook time: 45 minutes

 2 14.5-oz. cans reduced salt, fat-free chicken broth
 4 c. water
 1 lb. skinless, boneless chicken breasts, but into bite-size pieces
 3-4 cloves crushed garlic
 1 onion, chopped
 2-3 celery stalks, chopped, including leaves
 1 10-oz. bag frozen peas
 1 10-oz. bag frozen corn
 1 15-oz. can crushed tomatoes
 1 8-oz. package wide noodles
 1 tsp. salt
 1 tsp. pepper
 1 Tbsp. parsley flakes
  1. Bring broth and water to a boil.
  2. Add chicken, garlic, onions and celery. Cover and simmer for 10 minutes.
  3. Add peas, corn, tomatoes, salt and pepper. Cover and simmer for 20 minutes.
  4. Add parsley and noodles. Continue simmering uncovered for 10 minutes or until noodles are done.
  5. Serve hot with fresh bread.

Per serving: 245 calories, 24g protein, 35g carbohydrate, 2g fat, 0g saturated fat, 56mg cholesterol, 5g fiber, 680mg sodium.
