Makes 4 servings Preparation time: 10 minutes Cook time: 45 minutes | 2 14.5-oz. cans | reduced salt, fat-free chicken broth | | 4 c. | water | | 1 lb. | skinless, boneless chicken breasts, but into bite-size pieces | | 3-4 | cloves crushed garlic | | 1 | onion, chopped | | 2-3 | celery stalks, chopped, including leaves | | 1 10-oz. bag | frozen peas | | 1 10-oz. bag | frozen corn | | 1 15-oz. can | crushed tomatoes | | 1 8-oz. package | wide noodles | | 1 tsp. | salt | | 1 tsp. | pepper | | 1 Tbsp. | parsley flakes |
- Bring broth and water to a boil.
- Add chicken, garlic, onions and celery. Cover and simmer for 10 minutes.
- Add peas, corn, tomatoes, salt and pepper. Cover and simmer for 20 minutes.
- Add parsley and noodles. Continue simmering uncovered for 10 minutes or until noodles are done.
- Serve hot with fresh bread.
