Chocolate Chip Oatmeal Cookies
1 cup butter, softened
½ cup sugar
¾ cup brown sugar, packed
1 tsp. vanilla
1 egg
1 cup unsifted flour
1 tsp. baking soda
½ tsp. salt
1 tsp. cinnamon
1/8 tsp. nutmeg
3 cups uncooked, old-fashioned oats
1 bag (12 oz.) Ghirardelli semi-sweet chocolate chips
1 cup walnuts, chopped
Preheat oven to 375
In a large mixer bowl cream together butter and sugars until creamy and lightened in color (about 4 minutes)
Add vanilla and egg, mix on low until incorporated
In a separate bowl, stir together flour, baking soda, salt and spices; add to creamed mixture, mixing well
Stir in oats
Fold in chocolate chips and walnuts
Drop by rounded tablespoonful onto ungreased baking sheet
Bake 8-9 minutes for a chewy cookie, 10-11 minutes for a crisp cookie
Cool 1 minute on baking sheet before transferring to wire rack
Makes about 5 dozen cookies.
Sour cream cranberry cookie
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup margarine, softened
1 1/2 cups white sugar
2 eggs
1/2 cup sour cream
1 teaspoon vanilla extract
1 cup cranberry (dry)
1/2 cup white sugar
1 teaspoon ground cinnamon
In a large bowl, beat the margarine, 1 1/2 cups sugar, eggs, and vanilla until fluffy
Sift flour with baking powder, baking soda and salt
At low speed, beat sour cream into the egg mixture; gradually beat in the flour until well mixed
Add cranberry and mix by hand
Preheat oven to 375 degree
Lightly grease baking sheets
Mix the 1/2 cup white sugar with the ground cinnamon
Drop spoonfuls of dough 2 inches apart on the prepared baking sheets
