Partially Hydrogenated Oils and Other Fats to Minimize or Avoid

Avoid partially hydrogenated oils, which are found in most margarines and many breads, crackers, baked foods, supermarket dinners, commercially fried foods, fast foods and restaurant foods. Hydrogenated oils provide no useful nutrients; on the contrary, they are a source of “trans fatty acids,” which appear to promote diabetes and heart disease. It is not clear yet whether they promote cancer.

“Seed” oils: Oils made from corn, cottonseed, safflower, peanuts and sunflower seeds contain mainly omega 6 fatty acids. When consumed in excess, omega 6 fats appear to be harmful to the immune system, and may promote cancer. Minimize the use of these oils.
