As the temperature inches up and flowers begin to bloom, it’s time to enjoy some springtime flavors. Celebrate National Nutrition Month, by joining Providence and our partner, Homemade, to learn how to make fresh and zesty herbed salmon and asparagus. In these free, online cooking classes, we’ll give you all the instructions you need for a healthy dinner featuring fresh spring veggies.
“Getting a variety of fruits and vegetables helps us to meet our vitamin and mineral needs,” says Megann Karch, a registered dietitian nutritionist and clinical dietitian with Providence Swedish. “Each fruit and vegetable has its own profile of vitamins and minerals in addition to fiber that helps us feel full for longer, feeds our healthy gut bacteria, and keeps our bowels moving regularly. Asparagus is one of the first early spring tender vegetables.”
In addition to fresh and tender asparagus, this recipe features the bright flavors of fresh dill, lemon zest and lemon juice. This combination of flavors leads to an elegant, simple meal that you can have on special occasions — or just a Tuesday night.
This recipe makes four delicious servings and takes only 35 minutes total to prep and cook. It’s an easy meal to fit into your schedule and packs major benefits for your health, including healthy fats, plenty of antioxidants, and fiber for heart and gut health.
